Baked Salmon Praline Sauce and Soy Glaze


2 lbs of Fresh Salmon Filets

3 oz of Geaux Gourmet Praline Sauce

2 tlbsp of Soy Sauce

Salt and Pepper

Sesame Seeds

Green Onions-chopped


Oven Broiler or Toaster Oven temp of 375 degrees

Clean fresh Salmon filets, wipe down with paper towel, pat dry

Skin side down, season the fish with salt and pepper

Place fish on an oiled cookie sheet meat side up

Cook fish for 7-10 minutes or browned on top


In a small saucepan, bring the Praline Sauce and Soy Sauce to a boil. It may reduce, that is fine. Once fish is done, pour the reduced sauce onto the Salmon to finish in the oven. Retrieve from oven, place on plate and drizzle the glaze. Garnish with black and white sesame seeds and green onions.


Serve with white rice and stir fried vegetables.

Quick Ham Glaze

3 Easy Steps

1. SHAKE 2. OPEN 3. POUR

Take any spiral ham, cover with foil and cook until hot. As the ham begins to cool, SHAKE the Praline Sauce so all the solids can become mixed, OPEN THE JAR & POUR what you want on top of the warm ham. Sauce contains butter solids that will stick to the ham. Please keep in mind that both Praline Sauces contain Pecans. Serve and Enjoy!!

CUPCAKE ICING

3 oz of Whiskey Praline Sauce
8 oz of Mascapone Cheese
Mix both in a mixing bowl. Chill for half hour. Can be piped into a bag or quart size zip bag for fancy piping. Enjoy!!

Dessert Toppings
Bread Pudding. Put over your favorite store bought bread pudding. Heat in ramekin or in jar for 20-30 seconds. Sauce will be loose. Serve and eat.

Cheesecake Topping

Ice Cream Sundae or Ice Cream Topping: Why have hot fudge when you can have warmed Praline and Whiskey Praline Sauce on your favorite ice cream. Easy treat!

Pound or Angel Food Cake Topping

Breakfast:
Top with Belgian Waffles, Pancakes or French Toast. Heat in ramekin or in jar for 20-30 seconds. Sauce will be loose. Serve and eat.

Savory Treats:
Triple Cream Cheeses such as Brie- Bake in oven for 5-10 minutes, top with Praline Sauce. Great for any Holiday party.

Top with your holiday Ham, Pork Roast and/or Roast Duck. Use as a finishing sauce or glaze.

Praline Sauce and Warm Brie- easy recipe

This is how I started my Praline Sauce. I would cater an event through Champagne Dreams warming up a wheel of Brie cheese. Sometimes I would cover it in a Filo dough just to give it more depth. I would serve this on a platter, with my warmed Praline Sauce and side of wafer or buttery crackers. This got very popular and the Praline Sauce brought the plain Brie to a whole new level. Below is the easy recipe.

1 wheel of French Brie
1 6 oz jar of Praline Sauce or Whiskey Praline Sauce
1 12 oz box of Wafer Crackers or Buttery Crackers

Heat oven to 350 degrees. Unwrap Brie from paper, do not peel the outer covering. Lay Brie wheel on a cookie sheet or ceramic oven safe plate. Bake for 10-15 minutes. The Brie may look oozy, that's OK. Take out of oven and transfer to platter or use ceramic plate for display. Shake Praline Sauce and warm in microwave (removing lid first) for 30 seconds.
Pour Praline Sauce liberally over warmed Brie and serve with crackers. Enjoy!









Bread Pudding with Praline or Whiskey Praline Sauce

Everyone in their family has their own version of Bread Pudding. Here is a simple recipe that will get even the novice cook started.

  Butter (salted)

  Crushed Pineapple
 1       cup   Granulated Sugar
  1      cup      Brown Sugar

 tsp
 Cinnamon

 tbls  Vanilla Extract

Pre-heat oven to 375. Make sure the oven racks are in the middle.
  1. Cut French Bread into cubes using a serrated bread knife
  2. Using a mixer or whisk, in a large mixing bowl; beat eggs with sugar, cinnamon, vanilla extract, and whipping cream/milk until well blended.
  3. In large mixing bowl and combine egg mixture, fruit and bread.
  4. By hand (wear food service gloves) mix in large bowl, crushing the bread, softening it with the wet mixture. The consistency will be grainy, like wet bread, leaving a thick texture. (not too wet)
  5. In a large glass or metal pan 9 x 12, deeper the better, grease the bottom with spray oil or softened butter. Put the moist bread into pan, dot with salted butter cubes, cover with foil.
  6. Place bread in oven on the middle rack and bake for 40 minutes.
  7. Take off top so bread will crisp bake for another 15-20 minutes.
  8. Take out of oven and let rest for 1/2 hour before serving.
  9. Cut bread pudding into squares or scoop with large ice cream scoop.
  10. Serve individual pieces topping with Praline or Whiskey Praline Sauce.
  11. Enjoy!
